Crispy Golden Barra Wings

Ingredients: (Serves 2-4)
2 - 4 Barra Wings
Olive Oil
Flour
Salt and White pepper

Preparation:
Clean Wings and ensure all scales are removed. Lightly
dust in flour mixed with salt and pepper. Heat oil in pan and
shallow fry for 3 - 4 mins each side or until golden brown.

Serving
Serve on a bed of Cos lettuce with your favourite dipping
sauce and a crisp side salad.

Honeyed Golden Threadfin

Ingredients: (Serves 2)
500g fillet Threadfin Salmon
Olive Oil
Lemon juice
2 tablespoons honey
Plain flour
Salt and White pepper

Preparation:
Thinly slice the fillet and coat in flour mixed with salt and
pepper. Grill or lightly fry in olive oil. Heat the honey in a
saucepan with a generous squeeze of lemon. Pour over the fish.

Serving
Serve with steamed vegetables or a crisp salad.
