Ingredients: (Serves 4) 4 x 150g portion of barramundi ﬁllets (skinned) 1/4 cup hoisin sauce 1/4 cup sweet chilli sauce 1/4 cup lime juice 1 bunch baby bok choy, trimmed and quartered lime wedges to serve
Preparation: Preheat the oven to 200ºC. Combine the hoisin sauce, sweet chilli sauce and lime juice. Divide the bok choy between four sheets of baking paper. Top each with a ﬁsh ﬁllet and some of the hoisin sauce mixture. Fold up the paper to enclose the ﬁsh. Place the parcels on a baking tray and bake for 5-8 minutes or until the ﬁsh is cooked through.
Open the parcel and serve with lime wedges.
